I’ve come to find that one of my favorite things to do on a Sunday morning is flip through Pinterest looking for amazing recipes to try for the upcoming week. Last Sunday, while I was perusing the site, I came across this gem recipe.
My mom gave me an iron skillet back when I first moved into my house, and the only meal that has ever graced it’s iron face has been meatloaf. I figured it was time to change that- enter the Butternut Squash and Black Bean Enchilada Skillet recipe. (Originally found here).
For those who are unaware of my obsession with animals, I’d like to admit to you- here and now- that I’m obsessed with animals. The longer I raise Luna, the more I realize that I love being around dogs. They are such amazing creatures!
When I first launched my Corgi ComPawdres page, I (awkwardly/courageously) reached out to a girl I had read about in an article in the local paper. The article was about her new pet-sitting business, Spoiled Rotten Pet Care. Attached to this article: a picture of her and her Corgi. Um, I just had to message her and let her know about my Corgi group and invite her to share her adorable pup pics with the masses. Duh.
I figured this “Monday Makings” needed to be something other than food for once, so I did it. I finally completed my first DIY project since middle school history class where I had to put together a scrapbook about the San Antonio missions.

Sorry I haven’t updated my “Saturday Savings” segment in a while. I’ve been out of town and haven’t done much shopping as of late (which is really the ultimate “savings” tip- don’t spend). This next tip is exciting and economical. Not only can my readers benefit from this tip, but my blogger friends can, too!
This weekend flew by as we spent the past few days in BF’s old stomping grounds: Beaumont, TX. His brothers were in town from Dallas, so BF and his family decided to get together. Luna and I happened to tag along. (He can’t escape me… jk. Not really.)
We left SA around 5 p.m. on a Friday (yikes!), but managed to only hit a few spots of traffic on our way out of town. The rest of the 4 1/2 hour road trip was smooth sailing with little excitement. Pulling into their driveway around 9:30 p.m., we were greeted by his mom, dad, and baby bro. His other brother was arriving a bit later.
Yay! It finally came. BF and I vacationed in Denver this past weekend and we had tons of fun! Rewind back to March when we celebrated our 3 year dating anniversary. He surprised me with a weekend trip to Denver and two tickets to the Manchester United versus Roma soccer match while we were there.

Don’t be fooled by the name. This recipe is actually quite healthy. In fact, it comes out to approximately 220 per chicken. The chicken is lightly breaded with egg white and whole wheat bread crumbs and stuffed with laughing cow cheese and fresh broccoli. See? Not so bad!
