Monday Makings: Breaded Chicken Stuffed with Broccoli and Cheese

Don’t be fooled by the name. This recipe is actually quite healthy. In fact, it comes out to approximately 220 per chicken. The chicken is lightly breaded with egg white and whole wheat bread crumbs and stuffed with laughing cow cheese and fresh broccoli. See? Not so bad!

JuicePlus: Eat Your Fruits and Veggies

This past Saturday I attendended a JuicePlus conference with my blogger friend (and former classmate), Natalie of That Foodie Girl. Natalie and her mom are both avid JuicePlus users and sellers of the product. For those of you unfamiliar with JuicePlus, it’s a whole food based nutrition, including juice powder concentrates from 25 different fruits, vegetables and grains.

Throughout the day, I listened to a variety of different speakers from the president of the company to the company’s #1 top seller to a few National Marketing Directors all sharing their stories about how JuicePlus has enhanced their lives.

Monday Makings: Spinach and Artichoke Dip

Late Post Alert. I’m well aware that the Fourth of July was more than a week ago (Was it really? Time flies..), but I’m just now getting around to sharing with you what I made for our family’s annual July 4th BBQ. I’m so proud of myself for making this! Every time I talk about it I get giddy.

I have become a HUGE fan of spinach and artichoke dip. I mean I crave it. So when this BBQ came around, I offered to bring a healthier version of the dip so that we can still enjoy it without worrying too much about the excess calories. I made Hungry Girl’s Crazy-Creamy Spinach and Artichoke Dip and it was delicious!

Saturday Savings: Gap 40% Off

I use to shop at the GAP a lot when I was in high school. The older I got, the more I forgot about the GAP. :/ Sorry, but true.

Earlier this week I really wanted Chipotle (nothing new), so I headed over to the shopping center it was located in to pick some up.  I realized that it was only 10:45 a.m. and I felt a little lame ordering lunch that earlier so I parked and decided to pop in to the GAP.

Monday Makings: Creamy Orzo With Chicken

I did it again. I couldn’t help but make ANOTHER orzo dish this past week. I’m glad I did because it sure was delicious. This time I went with something a little hardier: Creamy Orzo with Chicken. I adapted the original recipe from the blog, ‘Table for Two”. (Click the link for the list of ingredients.) When I say ‘adapted’ I really mean I only changed the chicken sausage to actual chicken. Other than that, I kept everything the same.

Saturday Savings: Cartwheel by Target

Don’t you just love technology? Especially when it can save you some mula! One of the great things about being from a family of all girls (sorry Dad :/) is that we get to share the latest fashion finds with one another. Shout-out to Older Sis for introducing me to this great app: Cartwheel by Target.

If you love Target as much as I do, then you’ll love this iPhone app. Target already has some pretty great prices, but this app allows you to check all their discounts for the week and use them all at once.
